I am going to share with you my favorite four Fruit Mojitos using fresh summer fruit. I make these cocktails all summer long and you can easily transform them in mocktails by skipping the alcohol. Also, I love my mojitos with lemon juice instead of lime, but feel free to substitute.

What is Simple Syrup?

Simple syrup is an ingredient used in many cocktails. It is very easy to make. You will need 1 cup sugar, 1 cup water and optional ingredients are juice of one lemon and 1 cup mint leaves. In a medium saucepan combine all ingredients. Bring to a boil, stirring, until sugar has dissolved. Allow to cool. Discard mint leaves. Check my go to recipe for Simple Syrup here.

Raspberry Mojito:

A refreshing raspberry mojito, made with fresh raspberries is a delicious combo of sweet and tart. Very easy to make with cane sugar, or you can use Simple Syrup. You can skip the alcohol and make a virgin version that is very tasty. Taste your raspberries, make sure you are using sweet, ripe fruit for the cocktail to taste sweet.

Pineapple Mojito:

The tropical taste of this mojito will make you feel on vacation. Very easy to make with cane sugar, or you can use Simple Syrup. You can skip the alcohol and make a virgin version by adding pineapple juice. Make sure you use ripe pineapple that is easy to muddle.

Watermelon Mojito:

There is no summer without watermelon. For this Fruit Mojito make sure you blend well the watermelon and use a mesh strainer when pouring it into glasses. I don’t add extra sugar to this one, as the watermelon is sweet enough. Feel free to add simple syrup if you like it sweeter. Especially tasty when made with Perrier Watermelon sparkling natural water. You can find Perrier in other perfect for summer flavors like: Perrier Strawberry, Perrier Lime, Perrier L’Orange and Perrier Pink Grapefruit.

Roasted Blackberry Mojito:

One of my favorite cocktails, roasting the blackberries helps get all their juice. The blackberries are roasted in lemon juice and sugar, so I usually don’t add more sugar to the cocktail, but you can add some or some simple syrup if you prefer your sweeter. Make sure you use ripe blackberries.

Ingredients
Raspberry Mojito:
  • 6-8 fresh mint leaves
  • 6-8 fresh raspberries
  • Juice of half lemon
  • 1/2 fluid ounce simple syrup or 2 teaspoons sugar
  • 1 - 2 ounces of rum
  • 2 fluid ounces club soda or more to fill the glass
  • 8 fresh mint leaves
  • Ice cubes or crushed ice
Pineapple Mojito:
  • 6-8 fresh mint leaves
  • 1/2 cup pineapple flesh
  • Juice of half lemon
  • 1/2 fluid ounce simple syrup or 2 teaspoons sugar
  • 1 - 2 ounces of rum
  • 2 fluid ounces club soda or more to fill the glass
  • 8 fresh mint leaves
  • Ice cubes or crushed ice
Roasted Blackberry Mojito:
  • 6-8 fresh blackberries
  • 2 tablespoons lemon juice
  • 2 teaspoons sugar
  • 6-8 fresh mint leaves
  • Juice of half lemon
  • 1/2 fluid ounce simple syrup optional
  • 1 - 2 ounces of rum
  • 2 fluid ounces club soda or more to fill the glass
  • 8 fresh mint leaves
  • Ice cubes or crushed ice
Watermelon Mojito:
  • 6-8 fresh mint leaves
  • 2 cups watermelon chunks blended
  • Juice of half lemon
  • 1/2 fluid ounce simple syrup or 2 teaspoons sugar optional
  • 1 - 2 ounces of rum
  • 2 fluid ounces club soda or more to fill the glass
  • 8 fresh mint leaves
  • Ice cubes or crushed ice
Instructions
Raspberry Mojito:
  1. Add raspberries, lemon juice, sugar or simple syrup and mint leaves to a tall glass. Muddle to combine. If you want it without seeds, you can strain it.

  2. Add ice, rum and soda. Stir with a spoon to combine.
  3. Garnish with mint leaves and more raspberries.
Pineapple Mojito:
  1. Add chopped pineapple, lemon juice, sugar or simple syrup and mint leaves to a tall glass. Muddle to combine.
  2. Add ice, rum and soda. Stir with a spoon to combine.

    Optional: add a few ounces of pineapple juice, for a more pronounced tropical flavor.

  3. Garnish with mint leaves and lime or lemon wedges.

Roasted Blackberry Mojito:
  1. Preheat oven to 350F.
  2. In a small baking dish combine blackberries, sugar and 2 tablespoon lemon juice. Stir to combine. Roast in the preheated oven for 10-15 minutes. Remove from oven and let cool to room temperature.

  3. Add roasted blackberries, lemon juice and mint leaves to a tall glass. Muddle to combine. If you want it without seeds, you can strain it.

  4. Add ice, rum and soda. Stir with a spoon to combine.
  5. Garnish with mint leaves and more fresh blackberries.
Watermelon Mojito:
  1. Fill a tall glass 1/3 with the blended watermelon, use a mesh strainer when pouring it into the glass. Add mint leaves and lemon juice, muddle to combine. Add ice and fill the glass 1/3 more with blended watermelon juice. Add rum and soda and stir to combine.

  2. Garnish with mint leaves and watermelon wedge.
Recipe Notes

Originally mojitos are made with lime juice. I love my mojitos with lemon juice instead of lime, but feel free to substitute.
