Refreshing and with lots of texture this summer salad has grilled snap peas, juicy peach, salty feta, crunchy radishes and peppery arugula.
Hooray for Friday and for Grilled Snap Peas Summer Salad! What are you plans for this weekend? Ours are pretty wild, attending a toddler birthday party, can be wild believe me, but its all good and fun. I also asked my husband if we can visit a lavender field in NJ on Sunday, but since it seems that it may rain on Sunday I have changed our plans to staying home and I will be baking most likely.
Also, salad is in my weekend plans, as I need some green stuff in my stomach asap. And by green stuff, I don’t mean green frosting, actually something leafy green. I have been pretty good this week in terms of healthy eating and exercising, but today was different, Dippin Dots frozen yogurt for lunch, vanilla cake with cannoli cream, and chocolate cake as a late afternoon snack, followed by non-alcoholic (read – sugary juice) cocktails and cheese in the evening.
As anyone would agree I need a salad! This grilled snap peas and peaches summer salad is what I crave. I made it for dinner this week and it was unbelievably good. A big thank you goes to my husband who took the time to grill the snap peas, and who reminded me a few times that it took him 40 minutes to grill a bad of sugar snap peas and I only used a cup in this salad.
I like all the textures going on here, the grilled snap peas are a little on the chewy side, crunchy radishes, juicy and flavorful tomatoes, sweet peaches, salty feta, all on a bed of peppery arugula. This is salad perfection in my opinion. Served with a dash of olive oil, lemon juice, salt and pepper, this summery salad is refreshing and totally fabulous for your taste buds.
A dish on its own, or served on the side, this grilled snap peas, peaches and feta salad will be a hit at any picnic or barbecue party. Now, if you will excuse, me I am going to ask my husband very nicely to grill some more sugar snap peas for me, as I need this beautiful and heavenly delicious salad in my life again. I need to get all the energy possible to be able to chase my baby this weekend.
- 2 cups arugula - washed
- 1 cup sugar snap peas - grilled
- 1 peach
- 4 organic radishes
- 3 organic tomatoes
- ½ cup feta cheese
- ¼ cup of green onion, chopped
- extra virgin organic cold pressed olive oil
- salt and pepper
- half of lemon
- Grill the snap peas for a few minutes on each side and set aside.
- Using a good sharp knife slice the peach, radishes and tomatoes and set aside.
- Lay arugula on the bottom of a salad plate and top with tomatoes, grilled snap peas, radishes, peach and feta cheese.
- Grind salt and pepper on top, drizzle with olive oil and lemon juice and top with chopped green onions.
