Happy Monday guys! Hope everyone had a great weekend, mine was a good one. We spent Saturday cooking with friends, and Sunday shopping with our baby boy and a nice dinner at home. We had General Tso’s Chicken, Chicken and Broccoli, Veggie Fried Rice and a delicious warm Asparagus Hazelnut Salad with French Beans and Lemon Zest.
I know people are under the impression that food bloggers always eat homemade meals, that we can’t wait to come up with the next most amazing recipe. While the last part may be true, the whole cooking part sometimes gets exhausting. I for instance, work fulltime and also run this blog, most of the time I get home at 6PM, and at that point I just want to spend time with my family, not labor by the stove, unless its something very easy to make.
I have a three year old son, and while me and my husband work fulltime, we both grew up in families where dinner was a huge event with all family members gathering around the table and talking about their day, we want to offer him the same experience. With two busy schedules this may be hard, that’s why I rely on quality frozen meals with a simple and easy to make salad that I can pull together in 20 minutes.
We love the General Tso’s Chicken and the Chicken and Broccoli with a side of Veggie Fried Rice and my signature Asparagus Hazelnut Salad with French Beans. What I really like is that there are many ways to cook the InnovAsian dishes, I pop up the rice to get steamed into the microwave, General Tso’s Chicken in the oven, the Chicken and Broccoli in a wok and while all that cooks me and my son have fun cooking the Asparagus Hazelnut Salad to which I add lots of fresh lemon zest for a bold flavor. Now, I have a delicious dinner for my family ready in 20 minutes.
I appreciate it so much that I don’t have to stress about dinner during busy days like that. I like to teach my son about veggies, and to get him involved while we cook, so we have lots of fun making this delicious French Beans Asparagus Hazelnut Salad which we sauté in olive oil, with salt, pepper, lemon juice and lemon zest. I am obviously sharing the recipe below with you!
- 16 ounces French Beans
- 16 ounces Asparagus
- ¼ cup olive oil
- juice of one lemon
- 1 tablespoon lemon zest
- ½ cup toasted hazelnuts, chopped
- sea salt
- black pepper
- Wash and trim the ends of the asparagus and French beans.
- Place a large sauté pan over medium - high heat, add the olive oil. When the oil is hot add all the ingredients, except the hazelnuts, to the pan and sauté for 7-8 minutes.
- Top with the hazelnuts and serve warm.
