Gotta love a good bowl of oatmeal especially when that is Cheesecake Oatmeal topped with fresh blackberries, lemon zest and maple syrup. Breakfast for me is so important, I like to go to sleep and plan what I will eat the next morning and I always have some Quaker® Oats on hand to create different concoctions. Now, with Quaker® Oats running a “Bring Your Best Bowl” contest, I feel extra motivated to put on my oatmeal game face.
This Cheesecake Oatmeal is my favorite, its creamy, its hearty and it tastes amazing. Having oatmeal for breakfast is such an easy choice in our family. As working parents with a toddler who needs to get ready for school our mornings are hectic, but I still like to have some delicious and good looking food in the morning, as it sets the mood for the rest of the day.
I have my own memories of my mom serving a bowl of oatmeal to me before school, and those are some of the best memories that I hold on to, so I want to create the same for my son. My little guy is currently obsessed with blackberries, he can eat them all day long, and I am obsessed with cheesecake, obviously!
I also crave some spring, I am so over this cold weather, that you can totally tell from my bright and fresh Oatmeal Cheesecake bowl. I added some fresh lemon zest to add some brightness to my oatmeal, and also maple syrup for sweetness and some mint for extra freshness and a pop of color. I just hope that the spring fairies will see this Oatmeal Cheesecake bowl and will bring the sunny days sooner.
To give my Maple Lemon Blackberry Cheesecake Oatmeal bowl that cheesecake like creaminess, I cooked the Quaker® Oats in milk and mixed them with ricotta, that is the key to an unbelievably creamy texture. I got my Quaker® Oats at Walmart, which made shopping so much easier, as I just purchased the rest of the ingredients from there as well, including the maple syrup, ricotta and those fresh and bright lemons.
You can also make your mornings better with a delicious bowl of Quaker® Oats, other delicious toppings I usually add are blueberries and bananas.
How would you create your best bowl of oatmeal?
- 1½ cups Old Fashioned Quaker® Oats
- 1 cup milk
- 5-6 tablespoons ricotta cheese
- 2-3 tablespoons maple syrup
- ½ cup blackberries
- 1 teaspoon lemon zest
- Optional toppings:
- bananas, slices
- fresh mint leaves
- In a small sauce pan bring milk to a boil over low medium heat. Add the Old Fashioned Quaker® Oats and lemon zest, cook for 5 minutes, stirring occasionally.
- Remove from heat and stir in ricotta.
- Transfer to a serving bowl and top with fresh blackberries and maple syrup.
